Recently, a well known rabbi had us cater an 11 day tour of the Southwest for about 50 people.  We visited sights in Nevada, Utah, and Arizona.  We served gourmet meals daily in such places as Bryce-Zion and the Grand Canyon.  We were always one step ahead of the tour bus, so we were ready for them at every stop.  Shabbos was especially beautiful!
